Trader Joe’s Citrus Chicken Salad

TJ’s Citrus Chicken Salad is a great lunch for work or home. This salad has so many different ways you can make it your own. If I’m eating it at home I like to add extra lime juice. The lime slice is often tiny and does not add much flavor. I also like to add a little extra cilantro. It’s even better when I can heat up the chicken in a pan or in the microwave.

The dressing is one you will either love or hate, not much room in between. It does have a lot of tartness from the lime juice. I like the dressing but an easy substitution can be any peanut dressing. I’ve added peanuts before and the crunch really adds to the texture. I also appreciate that none of the ingredients wilt or go bad like tomatoes. There is nothing worse than biting into a bad tomato! If you are anything like me I’m the ass pulling the salads from the back looking for the one with the latest possible expiration date.


Ingredients: Grilled chicken breast (boneless skinless chicken breast with rib meat, water, canola oil, modified potato starch, salt, sugar, granulated garlic, lemon juice concentrate, black pepper), Napa cabbage, Thai salad dressing (fish sauce [water, anchovy {fish}, salt, sugar], water, expeller pressed canola oil, sugar, jalapeno pepper, rice vinegar, lime juice concentrate, garlic, xanthan gum), green papaya, carrots, daikon radish, lime wedge, green onion, red cabbage, cilantro.
